Fish noodles are a distinctive local specialty in Matsu, made from eel or “majia” fish as the main ingredient. The fish is minced and mixed with flour to form a dough, which is then baked, cut into noodle shapes, and sun-dried. The noodles may be stir-fried, served in soup, or even deep-fried.
