There are two liquor factories in Matsu, one in Nangan and the other in Dongyin. Dongyin Liquor Factory is especially famous for Dongyong old sorghum wine, which is naturally fermented through traditional methods. Mountain spring water distilled through zeolites is used to make the wine, along with the right temperature, humidity, and bacteria. It is up to the factory’s experienced winemakers to decide the time needed for brewing old sorghum wine. The fine wine therefore has a resounding taste. The people of Matsu love it for how precious it is, not just for its inexpensive price.
