A-Po Fish Noodles
A Matsu local specialty, these noodles are made from eel or mackerel. Ground into a fine mixture and kneaded with flour, the dough is then baked, cut into noodle strips, and sun-dried. Perfect for stir-frying, soup noodles, or even as a crunchy fried snack!
